Moyes was dismissed last Tuesday bringing to an end his disastrous 276-day reign in charge of the Red Devils.
United ended a tumultuous week by emphatically beating Norwich 4-0 in Ryan Giggs' first game in charge.
And Mata, who turns 26 today, offered a few thoughts on the Moyes issue in his personal blog.
"I must not forget, of course, that earlier in the week David Moyes longer our coach," he wrote.
"I wish you the best of luck in the future both to him and to his staff, and we certainly appreciate your continued interest and importance for my transfer to be new player of Manchester United."

Mata hit a double in the win over the Canaries and admitted it was nice to put a smile back on the faces of the supporters.
He added: "With the logical difficulty that the party involved but finally with a convincing result by four goals to nil.
"The fans deserve, of course, results like this after a difficult season in which they have gone home crestfallen too many times. This is what we will try to finish."
Mata even had time after the game on Saturday to pose for a selfie with supporters.
